Chef Daniela Scoops Hospitality Award

Daniela Bueno, a chef at the Royal Alexandra and Albert School has won the “Hospitality Chef of the Year Award”. Daniela entered the competition organised by Harrison Catering Services with a menu inspired by traditional Brazilian food.

Daniela drew on her Brazilian roots to present the judges with three elegantly presented courses. The starter was Daniela’s modern twist on a Feijoada, a bean stew served with fresh collard greens, cassava flour and a quail egg. This was followed by a simplified version of Muqueka, a traditional northern Brazilian fish dish. For dessert, Daniela played with the idea of the classic Caipirinha, deconstructing the drink to make a show-stopping dessert.

The competition was attended by top Harrison Catering chefs from around the country. In the Hospitality category, six chefs competed with their creative dishes to see who would triumph as top chef. The day was all about fine dining with chefs experimenting with texture, taste and techniques.

Daniela said of the competition, “It was a tough. We had three hours to prepare three courses. At first I was nervous, but once my first course went out I was fine. There wasn’t anything else I could do to it and that thought helped me relax.”

All the judges have been very impressed with the incredibly high standards and I’d like to thank everyone involved in making the event such a success”.

Daniela will soon have another opportunity to show off her skills in creating Brazilian dishes. The School will be having a ‘Brazilian Night’ on Wednesday 23 November. Pupils and staff are looking forward to a festa of flavour accompanied by a samba band.
